Potato Salad is my anti-Atkins
It's summertime, almost, in case you hadn't noticed. Maybe not technically, but I think we all know that May really marks the start of the hot months, and so is as much a constituent of the season as June, July, or August. Point being: it's time for picnics. And what do you need at picnics? Wicker baskets, checkered blankets, and some cute food. Like what? Like potato salad. Check out this Sweet Potato Salad number:
INGREDIENTS
4 medium sweet potatoes (about 1 1/2 pounds)
1/4 cup peanut or vegetable oil
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium green pepper, chopped
1 small onion, chopped
1 stalk celery, chopped
Parsley
DIRECTIONS
Heat enough salted water to cover potatoes. Add potatoes. Heat to boiling; reduce heat. Cover and cook until tender 30 to 35 minutes; drain. Cool potatoes; slip off skins (seduce the potatoes first, the sweet potato is not an 'easy' vegetable). Cube potatoes; place in glass or plastic bowl. Mix oil, lemon juice, salt and pepper; pour over potatoes. Cover and refrigerate at least 4 hours. Stir in green pepper, onion and celery. Eat until full.
Sounds great!! Let me know how this turns out, if any of you actually cook and consume this.
